Assam is one of the most recognised names in tea. What most people don't know is that across Meghalaya and Assam, exceptional coffee has been growing quietly for decades, in the plateau forests, the deep river valleys, and the high-altitude farms that most of the country has never heard of. Almost none of it reaches the people who would appreciate it most.

Two people who grew up in Assam came home, looked at what was growing in the hills around them, and decided to do something about it. Not out of novelty. Out of the simple conviction that this coffee deserved to be roasted properly, packaged honestly, and put in front of people who take their cup seriously.

hillwood. was founded in Guwahati in 2026. We source directly from farms in Meghalaya and Assam, roast in small batches, and start the way all honest things start — with one carefully made product.

The plateau at 1,430 metres, above the clouds.

A 100% Robusta sourced from the mist-draped plateaus of Pynursla in East Khasi Hills, Meghalaya, 42 kilometres from Shillong, at an altitude of 1,430 metres (4,690 ft). This is terrain shaped by deep valleys, lush green forests, and a climate that pushes Robusta to produce flavours well beyond what the variety is typically known for.

Bold, earthy, and full-bodied, with the kind of depth that comes from high altitude and unhurried growing. Built for those who take their coffee seriously. Available whole bean, or ground to order for your brew method.

Brewing Guides

Getting the Best
from Roast 001.

Roast 001 is a bold, high-altitude Robusta. It responds well to methods that let its full body and earthy depth come through, don't be afraid to brew it strong.

French Press

  • Coarse-grind 30g of Roast 001
  • Add to press, pour 480ml water at 96°C
  • Stir once, place lid on without plunging
  • Steep for exactly 4 minutes
  • Press slowly, pour immediately, drink black
The bold body of this Robusta opens right up in a French Press. Best drunk without milk.

Moka Pot

  • Fill the bottom chamber with hot water to the valve
  • Pack the basket with medium-fine Roast 001, level, not pressed
  • Assemble and heat on medium-low flame
  • Remove when you hear a gurgling hiss
  • Pour immediately, add milk, or drink straight
Moka pot suits Robusta's intensity perfectly, almost espresso-like richness, at home.

Cold Brew

  • Coarse-grind 80g of Roast 001
  • Combine with 1 litre of cold filtered water in a jar
  • Stir, cover, refrigerate for 16–18 hours
  • Strain through a fine cloth or filter paper
  • Serve over ice, dilute 1:1 if needed
Robusta cold brew is surprisingly smooth, bitterness mellows into clean, earthy depth. Lasts 2 weeks in the fridge.
